whole-grain, yogurt, and berry pancakes



from the pregnancy cook book, a delicious, healthy pancake recipe.  these are high in complex carbohydrates and fiber, two things needed in a third trimester.  i devoured these!

1/2 cup all-purpose flour
1/2 cup whole-wheat flour
1/4 cup wheat germ
1/4 cup yellow cornmeal
2 teaspoons baking powder
1/2 teaspoon sea salt
1 egg
1 tablespoon unsalted butter, melted
2 tablespoons honey
1 1/4 cups vanilla yogurt (or plain, and add more honey)
1/3 cup skim milk

in a large bowl combine well the flours, wheat germ, cornmeal, baking powder, and salt.
in another bowl, whisk the egg, melted butter, honey, yogurt, and milk.
make a well in the center of the dry ingredients.  pour the egg mixture into the well and whisk until smooth.
preheat a skillet or griddle over medium heat.  when it is hot, add a small amount of butter and quickly spread it over the pan.
add 1/3 cup batter to the pan and cook the pancake until bubbles appear.  flip and cook until golden and cooked through.

add berries and maple syrup for toppings.
