Irish Soda Bread



i've made irish soda bread lots of times, but never this recipe.  this version is certainly not traditional, but it's killer-- and full of fiber, iron, and calcium.

3 Tbsp cornmeal
1 1/4 cups unbleached, all-purpose flour
1 cup whole-wheat flour
1/2 cup rolled oats
1/4 cup toasted wheat germ
2 Tbsp sugar
1 tsp sea salt
1 tsp baking soda
1 tsp baking powder
3 Tbsp unsalted butter, room temperature
1 cup raisins
1/4 cup walnuts (i despise all nuts so i used chopped dates)
1 1/3 cups nonfat plain yogurt
1/4 cup honey
2 tsp orange zest

- preheat the oven to 350.
- sprinkle a heavy-duty baking sheet with the cornmeal and set it aside.
- in a large bowl, combine the flours, oats, wheat germ, sugar, sea salt, baking soda, and baking powder.
- with a pastry cutter or your fingers, cut the butter into the flour mixture until crumbly.  stir in raisins and nuts.
- in a medium bowl, combine the yogurt, honey, and orange zest; mix well.
- stir the wet ingredients into the dry ingredients until just moistened. dough will be sticky.
- lightly flour a work space and knead the dough for 1-2 minutes.
- shape the dough into a ball and place it on the prepared baking sheet.  with a sharp knife, cut a 1/2-inch-deep cross into the top of the dough.  sprinkle the top with flour and wheat germ.
- bake the bread for 40 minutes (it took mine about 50) or until cooked through.  allow to cool completely before cutting it.
