first things first: baja sauce

this sauce goes on everything.  i mean everything.  originally intended for fish tacos, we also use it for our chicken fajitas, regular tacos, and spread thinly on sandwiches in place of mayo and mustard (<-- the best!)  

we found it online and have doctored it up a bit (er, a lot) to suit our tastes.

you will need:  

                                                        (use a lime that looks better than mine!)


baja sauce
1/2 cup plain yogurt
1/2 cup mayonnaise
1/2 teaspoon crushed oregano
1/2 teaspoon cumin (oops, not pictured!)
1/2 teaspoon cayenne (the original recipe said chili powder but we like SPICE)
salt and pepper (to taste)
chili paste (to taste) (this is optional, of course)
juice of 1 [juicy] lime (or two if you like more!)

mix all together in a bowl; store in refrigerator for as long as your mayo and yogurt are good.  if you're going to scrimp on some ingredients (like i do with every recipe), just don't leave out the lime!  it's key.

  2. So I put this over chicken like a BBQ sauce and had brown rice and vegies with it. It was wonderful.
